Kathy,

There is one open source tool called Mondrian for specifing and viewing
cubes. The codebase isn't very intuitive though.

You could build your own Olap tool in java (we built an Olap Engine within 2
person-months). Many pieces of the technology are available, if you know
where to look ;)
